Make Your Own Cannabis Gingerbread Treats

The smell of sweet, spiced gingerbread is starting to fill the air—it’s that festive time of year again! Baking your own holiday treats is the perfect winter tradition that brings its own special kind of cheer. This year let’s sprinkle a little something extra into this holiday tradition by infusing our gingerbread baked treats with cannabis! First, start this recipe by preparing some cannabis-infused butter, which can be added to just about any baked goods you like. You’ll need it before you start your gingerbread baked treats.

 

How to make cannabis-infused butter

Cannabis butter can be prepared in a variety of ways, the simplest one being stovetop infusion. We’d suggest making the cannabutter in advance before you begin baking your cookies, as it takes some time.

To start, you’ll need to decarb your cannabis to active its cannabinoids. First, pre-heat your oven to 220° F. Break your buds into large chunks and evenly spread them onto a parchment-lined baking tray, then bake for about 45 minutes. Once the color of your buds has changed to deep brownish-green, remove them from the oven and allow them to cool.

Choose a fat of your choice (butter, olive oil, coconut oil, anything works) and let your decarbed cannabis simmer in it for approximately 4 hours. Gently stir every half-hour to make sure it’s not burning. Finally, strain with cheesecloth or mesh strainer into a container and let the butter cool to room temperature.

Cannabis Gingerbread Recipe Card

Ingredients:

Gingerbread Dough:
  • Dry ingredients: 3 cups all-purpose flour, ¾ cup dark brown sugar, ¾ teaspoon baking soda, ¼ teaspoon salt
  • Wet ingredients: 2 eggs, 6 tbsp cannabis-infused butter, ½ cup dark molasses, 2 teaspoon vanilla extract
  • Spices: 1 tablespoon ground ginger, 1 ¾ teaspoon ground cinnamon, ¼ teaspoon ground cloves
Icing:
  • 1 cups confectioners’ sugar, ¼ cup milk (or as needed) Optional: food colouring
Toppings (optional):

Instructions:

  1. In a small mixing bowl, combine dry ingredients and spices. In another large mixing bowl, beat cannabis-infused butter with sugar. Add other wet ingredients and whisk all the ingredients thoroughly. Gradually, combine the wet and dry ingredients and knead your dough until everything is properly blended. Let this dough stand at room temperature for at least an hour.
  2. Sprinkle flour over dough and rolling pin. Roll your dough to approximately ¼-inch thickness. Use additional flour if dough is sticking to the pin.
  3. Preheat oven to 375° F. Cut out your dough with desired cookie-cutter and space them out at least 1-inch apart on a parchment-lined baking tray. Bake for 7-10 minutes! Once baked, allow your cookies to cool down before decorating, so the icing sticks properly.
  4. It’s time for the icing! First, sift confectioners’ sugar into a large bowl. While whisking with a hand mixer or stand mixer, add milk slowly to monitor your icing’s consistency. Mix for around 2 minutes. You’ll know your icing is finished when it is smooth and drizzles down easily. If you accidentally add too much milk and your icing is too runny, either keep whisking or add more confectioners’ sugar. Transfer your icing to a piping bag.
  5. It’s time to decorate! Grab your chosen THC edibles and showcase your creativity with funky holiday-themed designs. Grate infused chocolates onto your icing as a finishing touch, or stick on infused gummies for a fruity twist. You can also opt for non-infused gummies and chocolates!
